And when it is Skimed, & neere Candy height, put in the former substance, as it boile, & take it imediately of the fire, but So long, as you may disperse it so in your Syrrape with the back of yoe Spoone, yt there bee no whole Lumps: Then with a quick fire, boile it up to a Marmalad height, stirring it continually for burning: & cast in yoe moulds of pewter, which must bee dry. Observations in the doing. To doe well, yoe Syrrop would bee first made, & ready, when you should use it. Cast them as thick as your moulds will endure, & somewhat higher: for they will wast in the drying: and when they bee thinn, they will tast tough of ye Sugar. The rines must bee brayed with exceeding care, & paines, els they will bee litle yeallow peices Seene in the past: So must the meates bee very diligently cleansed of their strings, & kernells. Dry it in a boxe with a temperate heat, & turnd every day once, untill they bee crisp. Make not above a pound at a time or thereabouts, for the past will have the better colour.
