Lady Penruddock. To preserve Quinces white. Pared, & cored, boyle them in water till they bee tender, then put them in severall cloths: then take Pippins, & boile them to peices in faire water. Then take a pint of that Pippin-water to one pound of Sugar: and boile both together unto half a pint: Then put yoe Quinces in, & boile them up. Take two pound of Sugar to one of Quinces. To doe Quinces redd. Pared, & cored, scald them: then take ye parings, & cores, & some small Quinces, & Pippins, & boile them till the water turne to a gelly. Then take two pound of yoe Quinces to three pound of Sugar, and put two quarts of water to them, & boile them up. You must not put them up, till they bee cold. To make Past Boile yoe Quinces tender, then pare them, & streine them; Take one pound of Sugar to a pound of Quince. Put to yoe Sugar beeing beaten small, as much water as will moisten it. Then boile it so long, till it breake betwixt yoe fingers. Then waxe yoe moulds with yeallow waxe, & hold it to the fire, then rubb it out [illegible] put yoe stuff [illegible]
