To make Marmalad of Orenges Take half a pound of the best Orenges, pare the uppermost part of them very thinn. Wring out all the juice, & as you pare them, put them in cold water, with the meates in them: And when you have pared all, put them in boyling water on the fire: & so shift them in hote water, till you see the Orenges are tender, & the bitternes gone. Then pick out all the meates, & lay them on a faire cloth, & dry them, then bruise them, as small as you can, & while you are buising them, take a pound of Apples, a pint of water, & a quarter of a pound of Sugar, & boile them as fast, as you can. And when you see the apples any thing cleere, take them of the fire, & draine the gelly-water: Then the put the white of yoe Orenges in Suger to it, & set it to the fire, & when it is boiled up, put in yoe Orenges, that you bruised, & let it then boile as fast as you can: when it is very neere boiled enough: take the juice of ye Orenges, & a litle Musk, & put to it: & let them boile till you see it will gelly on your spoone. Then take it of the fire, & put it in your boxes, & cover them.
