bee seene in the Past: As you beate it, you must infuse refined Sugar (which must bee ready beaten, & searced) at severall times, untill it come to a Past, that may bee wrought in yoe hands: whereof make yoe Cakes, & print them. Observations in the doing. Let yoe water boile, before you put them in; & all the time they bee in boiling, & open them a litle at the topp as deepe as to the bottome of the core. The stiffer they bee dryed upon the boiling water, the less Sugar makes them a Past, & tast the stronger of the Quince: besides the Past will looke the cleerer: So will it, the thinner you roule your cakes. If you rowle them thick, they will eate the tougher. Let no dust bee made in the place, & every thing you use, let it bee extraordinarily neate, & cleane: for the purenes of the Past is a speciall comendation. Insomuch, that you should flowre them, & take of their pulp with an Ivory knife: for an ordinary knife will gather soile exceedingly unless you wipe it often.
