34 Mock-Turtle Three Cows Heels cut in pieces from the Bone, stew'd in four pints of Water, five Anchovies, a piece of Butter, Salt, Chyan Pepper, Mace, Cloves, Lemon Peel finely cut, the leaves of three Leeks, some Parsley, and Lemon Thyme, five or six spoonfuls of Walnut Catsup, stir them slowly for two Hours, then cut two pounds of Lean Veal, in pieces, or half a Calves Head, fry it a light brown, add to the above the Juice of two Lemons, and half a pint of Madeira or Sherry Wine,, then stir it two Hours more and send it to the Table with force Meat Balls, and hard Eggs Orange Jelly Boil as much Hartshorn Shavings as will make a pint of stiff Jelly, boil an Ounce of Isinglass in a pint of Water, the Juice of four China Oranges, and four Seville, strain it through a Sieve, and put in the Rinds of two Seville Oranges mix all them together into the Jelly, sweeten to your Taste with Lump Sugar, boil it up together, and run it through a Jelly Bag into Moulds wetted with Water, Turn them carefully out when set.
