To pickle Hams One pound of Bay Salt, half a pound of common Salt, two ounces of Salt Petre, one ounce of black Pepper, beat them all together, and rub them on the Hams, let it lay four Days, keep it turned dailey, then add a pound and a half of Treacle, let it lie a Month, Put it Water 24 Hours before you hang it up - It requires no soaking before it is boiled. Apple Jelly Pare six large Apples, do not cut them, put them in a saucepan, with a pint and half of Water, two ounces of Isinglas, and a little Cochineal bruised, let them simmer till the Isinglass is dissolv'd, then strain it through a Sieve and sweeten it to your taste, add some Lemon juice, strain it through a Lawn sieve, and put them into Moulds. To fix colors in Linen Put two pennys worth of Sugar of Lead in a middling size Tub, fill it with cold Water, then put the Linen in, merely to thoroughly wet them, then wring them out, and wash them. NB Sugar of Lead is called white Vitrol; also Sulphur of Zinc
