the Whites of 6 Eggs beat well, ten oz. of double refin'd Sugar, set it over a very slow Charcoal fire, Stir it all the Time one way, skim it, and when it is Hot as you can bear your Fingers in, pour it into Glasses To make a Pruen Pudding Take a Quart of milk, beat 6 Eggs, half the Whites, with half a pint of the milk and 4 Spoonfulls of flour, a little Salt & Spoonfulls of beaten ginger: then by Degrees mix in all with the Milk, and 1 # of pruens tie it in a Cloth. boil it an Hour, melt Butter & pour over it. Damsons eat well done this way instead of Pruens To Frickasey Cod Get the Sounds, blanch them. then make them very Clean, and Cut them into little Pieces. if they be dried sounds you must boil them very tender. get some of the Rows, blanch them, and wash them Clean, cutthem Cut them into round pieces about an inch thick, with Some of the Livers, an Equal Quantity of each, to make a handsome dish, and a piece of Cod about one pound in the middle. put them in a Stew pan, Season them with a little beat mace, grated Nutmeg and Salt, a little Bundle of Sweet Herbs, an Onion, an a Quarter of a pint of fish broth or boiling Water: Cover them Close, and let them Stew a few minutes; then put in 1/2 pint Red Wine, a few oysters with the Liqueur strain'd, a piece of Butter rool'd in Flour; Shake the Pan round and let them Stew softly, till they are Enough. take out the Sweet Herbs and Onions, and dish it up. Garnish with Lemon; or you may do them white thus instead of Red Wine add White and a Quarter a pint of cream.
