Boil'd pretty high then put in the rest of the Sugar, let it boil till it can Candy about ye Angellica then take it up and lay it upon a Plate & put it in a Stove & put a little fire. 13th To make White Marmalet of Quinces Take fair Quinces, clear from Spots, set on a Kettle of Water make it Boil and put in your Quinces & 3 pippins paired, and the Cores cut out, make y/m Boil apace, till they are very tender, then take 'em up & peal them & cut your pulp from the Core of ye Quince, Beat your Aple and Quince together till it is Small, then Weigh it and to apound of Quince put apound of Sugar, 1/2 a pint of Water. break ye Sugar lb into little lumps, set your Sugar & Water on a Quick fire, and let it Boil till it will draw a Hair, then put in the Quince make it Boil very fast till it's enough, then put it into potts & ye next day paper it up. 14 To Make Elder Wine To 3 gallons of Spring Water, 5 Quarts of the Juice of Elder Berries when fully Ripe, to every Gallon of Water, 3 lb of good Brown Sugar, & mix it altogether, boil it well, & Skimm it 1/2 an hour, & then set it aCooling, and work it w/ Yeast y/n put it in a Cask, and in two or three days, Stop it up very
