Then work it very fine wt your hands & put a little seasoning put it very close into a pot of Clarifye Butter and put on the Top 47th To Preserve whole Quinces or in Chips First you must take the Cores out of them with a Scoope, then Scal'd and pare them, lay 'em in Single in the Bottom of a pan, put as much Sugar as will cover 'em, Setting y/m over a Charcoal fire Just keep Them Simmering in that untill they turn Red, & your Syrup will be a Jelly, then put them into Glasses or Gelly Potts 48th To Preserve white Quinces They are Scalded & done in every particular as above, only boil your Sugar first to draw a Spoons length, then put in your Quinces, & Boil them as fast as you can together untill they will Gelly 49th To make a Goose Giblet Pye Take a pair of Goose Giblets & break the Bones with a Roling pin, then for Seasoning you must have, one ounce of peper, one Nutmegg grated, 2 oz of Salt & 2 lb of Butter this Seasoning will serve Mutton or Veal pie in the Mutt_ you need not put 1 lb of Butter
