To Pickle Salmond to 4 Quarts of Water put 1 quart Vinegar, 2 good handfulls of Salt some Horse Raddish a Lemon Sliced make it boil put in your fish on a plate when boyld enough take it out till tis cold then keep it in the same Pickle To Pickle Peaches Take peaches full grown, but not full Ripe Just give a Scald & when cold put 'em into pickle, made wt good Vinegar a little Mace Cloves, Horse Raddish, & a little whole pepper, boyled up together then put 'em up, you must wipe the fur of Your peaches before you Scald them To Jelly of Hartshorn Take 1/2 lb of Hartshorn 4 Quarts of Spring Water & boyl it in a pipkin till it be 3 pints & then strain it through a skill Sive or a fine haire one & put to it when it is about Blood warm 3/4 lb of double Refind Sugar ye Juices of 4 Limons Whites of 6 Eggs Beaten 1/2 pint of Rhenish Wine & let them boyl up together. Skim it & then put it in your Jelly Baggs you may put a Sprigg of Rose water or some Limon peal into the bagg put it through your bagg 3 or 4 times till it be Clear & thinn put it into your glasses
