Whisk up the white of 1 egg, shell & all, with the ingredients before pouring them into the pan, then put them into a jelly bag. Medlar Jelly The medlars are apparently decayed before fit for use. Put them into a [mug?], packed very close and nearly covered with water, then gently stew till the fruit is quite soft
