Gooseberry Cakes Put a lb of green gooseberries into a jar, tie it over with a piece of paper, put it into a sauce pan to boil, & when soft rub through a sieve. Add 1 lb of pounded loaf sugar. Pour on to dishes 1/2 inch thick, let it stand by the fire or in the sun till quite hard. Then cut it into small shapes. Cocoa Nut [Rock?]. 1 1/2 lb of lump sugar to the cocoa nut; well beaten up, with the Milk of the same, boil perhaps 1/2 an hour constantly stirring Then pour on to a buttered tin.
