Cakes. Biscuits Sponge Cake. Take 7 oz of flour, 3/4 lb of loaf sugar, the rind of a lemon grated, 6 eggs with the whites (the eggs must be beaten 1/2 an hour before put to the above) then baked in rather a quick oven. Currant cake. One lb of flour 1/2 lb butter 1/2 lb moist sugar, a tea spoonfull of carbonate of soda, 1/2 a pint of new milk just warm, 3 eggs & 1/2 lb of currants. The currants to be added last & the whole to be well mixed. Bake as usual.
