into cold spring water, drain them, put them into a preserving pan with a quantity of white sugar, sufficient to make a thick syrup, dip each piece of sugar in Spring water, this & the water, remaining on the stalks become clear, then add a little Cayenne, put all into jars with bruised Ginger, do not boil this in the syrup, as this causes fermentation, when the stalks taste of the ginger, the preserve is ready for use. When served a few drops of essence of lemon should be put to it. The Green Cop Lettuce makes green Preserve.
