Cow heel jelly with beer. Jointed in 4 quarters and put on with 4 quarts of cold water, boil 8 hours, strain it off next day - remove all the oil and fat and put the stock into a clean stew pan. Add 3/4 pint of table beer (pale ale bitter) 3/4 lb of good moist sugar 3 eggs white shells & yolk beat up & put in 8 cloves a teaspoonful of pounded cinnamon
