Orange or Apple snow balls wash half a pound of rice boil in plenty of water quietly for 10 or 12 minutes drain and cool it pare 4 or 5 large oranges clear them from the white inner skin spread the rice in as many equal parts upon some pudding or dumpling clothes lie the fruit in them and boil the snow balls and hour and a half turn them carefully on a dish strew plenty of sifted sugar over them Omlet 6 eggs beat very light strained through a sieve seasoned with a little salt and peper fried in butter quite thick
