Molasses Gingerbread from Mrs. Rea Boil 1 pint of molasses - add three table spoonful of ginger, when cool, add 1 teaspoonful of saleratus & flour enough to roll it out - roll it very thin - it takes but a few moments to bake it. Sponge Bread - One pint of new milk one pint of boiling water make it about as thick with flouor as flat jacks - in the morning add a quart of warm new milk - put it in the pans & let it stand till it rises. Pound Cake - 1 pd flour 1 do butter - 1 do sugar - 10 eggs seperate the whites & yolks & beat both thoroughly - wash & cream the butter & add the sugar by degrees - when well mixed add the beaten yolks - then the whites & lastly the flour just as the cake goes into the oven. A little mace. Sponge Cake - 3 tea cups of sugar, 2 do flour - 9 eggs the rind of a lemon, grated, & the juice of half a one - seperate the whites & yolks & beat then thoroughly - then put them together & then beat them a short time, then add the sugar & [juice?] as the cake is going into the oven add the flour
