Vegetable Soup for invalids 2 turnips - 3 potatoes 1/2 onion cut them small - a good root of Celery cut fine, put all in a quart of water with a little Salt - boil it 3 hours Egg & Milk (for invalids) Beat up an egg, sweeten it to your taste and pour on it a breakfast cup of boiling milk. Grate a little nutmeg on it. Essence of Beef (For invalids) Take 1 of 2 lbs of beef with out fat, from the round, cut it into small pieces - put it into a jar - stand the jar in a vessel of water boiling let it boil half an hour - a little Salt - a blade of mace may be added if allowed - it will make a tea cup full of liquor which must be strained off - Given as directed - a spoonful or two at a time. There should be no water put in with the beef - but the Jar should be put in boiling water. Pork Cake 1 lb Pork chopped very fine - pour half a pint of boiling water over it Fry it a little before it is chopped 1 1/2 cups of sugar, 1 1/2 of molasses, 8 cups flour, 1 do raisins 1 nutmeg 1 table spoonful of cinnamon 1 do cloves 1 teaspoon of soda
