Snow or lemon sponge 1/2 paper gelatines, pour over it one and a half pints of boiling water 2 cups of Sugar, juice of two lemons - Dissolve and cool. When it begins to harden have the whites of two eggs beaten to a stiff froth, then beat all till stiff. Put into moulds & let it harden. Take yolks of two eggs, with one or two whole ones and make a pint of custard to eat with it - Floating Island Beat the whites of 3 eggs till they will adhere to the plate upside down - Have ready one qt of milk, a small part of which has been allowed to nearly boil. Pile the whites in a pyramid and put in the hot milk, and let them remain a minute. Take it out, put it into a deep Dish. - Take the yolks with four table spoonsfull of sugar and mix with the rest of the milk & pour in the Spider, Stir briskly till it just boils Flavor with lemon or Vanilla & pour over the whites. -
