Receipt to make Beer one Barrel Take 10 gallons of water, put one pound of hops in boil them one hour Strain in a Tub add cold water till it becomes milk warm then put 6 quarts of good molasses in the tub Stir it well then put it in a clear strong barrel lay it in a cool Seller and fill it full of fresh water let lay 3 days with the bung out then draw 3 pints out and put on pound seasons one ounce Sinamon one ounce cloves and one half pound brown sugar: the sugar must be browned in a iron pan till it becomes tolerably dark put in the barrel and bung the barrel up air tite and let lay 3 months then it is fit for use The above is for one barrel if Beer
