Miss [Marie's?] Yeast - 1 handful of hops - boil in 3 pints of water for 15 min. 4 good sized potatoes; boil and mash. Pour over the boiling hop water & while hot add 1 teacupful of flour, let it stand until lukewarm then add 1 tea cupful of yeast [When light?] 1 tablespoonful ground ginger 1 " " - sugar - 1 " " salt. Stir well, then raise again. Cover and put away. Use 1 teacup for six or eight loaves.
