36. Ice Box Cake 1 lb. vanilla wafers or graham crackers 1/2 cup butter 2 cups sugar 6 eggs 2 cups whipping cream 1 small can crushed pineapple (drained) Crush wafers and put half in large shallow pan; cream butter and 1 1/2 cups sugar well; add eggs one at a time beating well each time. Pour over wafers and let stand in ice box over nite. Whip cream; add 1/2 cup sugar and the drained pineapple, pour over mixture; pour the other half of wafers over whipped cream and pineapple and let stand several hours. (can be made one or two days ahead of time for serving) This makes enough for large party - 24 people.
