now transfered to the keg, which should be filled till there is but a small air space below the bung where the gas generated can collect. Through the bung pass a bent glass tube (not coming to the surface of the liquid) the outer end of which is put into water. This will allow the gas to pass off without allowing any air to get in. It should stand in this way till no sizzling can be heard when the ear is put to the keg. If the grapes are pressed about the first of Oct., this should be about the last of Nov. When the sizzling has ceased bung tightly and allow to stand till the vernal equinox when it will be ready for the first sacking.
