25 Lemon Pudding 3/4 lb sugar, 1/2 lb butter, yolks of 8 eggs, whites of 4, rinds of 3 lemons grated, & juice of one. A good plain pudding. Fill a baking dish that will hold 2 qts nearly full of apples cut coarsely. On this sprinkle 6 tablespoonfuls of sago, then pour into the dish as much hot water, as will cover the apples & sago. Let it bake 2 hours. If the upper pieces of apple become too broken, push them down, & others with take their places. This pudding should be eaten warm, with cream & sugar. When cold it is an excellent substitute for blanc mange. It is economical, healthful & delicious. Lemon corn pudding 1 pt mush, 1/2 lb butter, 1 lb sugar, 8 eggs, juice & rind of 2 lemons, Stir the butter into the mush while hot, bake in crust. Poor Man's pudding 1 cup sour or sweet milk, 3 of flour, 2 of chopped raisins, 2 of chopped suet, 1 of any kind preserve syrup, If you have none use molasses, 1 teaspoon soda, dissolved in the milk, boil 3 hours
