Pies &c Mince Meat 1 lb suet, & 1 of cooked lean beef chopped fine 1 1/2 lb apples minced, 1 lb currants, 1 1/4 stoned raisins, 1/4 lb citron cut up, table spoon powdered mace, 1 of cloves, 1 of cinnamon, 1 nutmeg, a teaspoon of salt, & one of pepper. Sugar to your taste. Mix all up with strong brandy toddy. Put it in a stone jar and keep it closely covered. Lemon Pie The juice & rind of 2 lemons, 1/2 a teacup of melted butter, 6 eggs, 4 tablespoons cream, 3 teacups sugar. Beat whites & yolks separately. Beat lemons, yolks, & butter together. Add the cream, whites, & sugar, & half a pt new milk. Rhubarb pie made like it. Puff Paste. 1 lb flour, 1 of butter, a little salt. Cut the butter in 4 pieces. Rub one into the flour until mixed. Make up with cold water, then roll and spot 3 times, which takes up all the butter. 3/4 lb butter & 1 1/2 flour make a very good paste.
