or fruit. Beat the whites of the eggs till they stand alone, then beat into it by degrees some very fine sugar, until thick as icing. Flavour with a few drops of lemon extract, & heap it upon each cake, making it high in the middle. Put the cakes in an oven with coals on the top, & as soon as they are coloured a light brown, they are done. Icing 1 lb very fine sugar, the whites of 3 eggs beat together until very thick & smooth. Dust the cake over with flour, & then brush it off by way of taking off the grease, which prevents the icing from running. Put it on smooth with a knife. Lemon Cake 4 cups flour sifted as light as possible, 1 of cream 1 lb sugar, 1/4 lb butter, 5 eggs, the juice & rind of one lemon. 1 teaspoon soda, 2 of cream tartar. Railroad Cake. 1 lb flour, 1 of sugar, 3/4 teaspoon cream tartar, sifted together, 4 eggs broke into it. 1/4 teaspoon soda, dissolved in a tablespoon warm water put in last. Bake quickly, spread with jelly, & roll while warm.
