Artichokes. Wash, & put them in strong brine 4, or 5 days. Then rinse them well in fresh water, & wipe dry, & put in jars. Add cloves, alspice, & mustard seed Cover with cold vinegar, & tie up close Nasterstions Lay them in salt & water 2 or 3 days, then wash in resh water, & let them drain. Cover with cold vinegar. a little sugar is a very great improvement. Sweet pickle Water melon rinse, Slice, & put in weak vinegar, & water 12 hours boil them until tender in the same water, then drain well, & prepare your vinegar to cover as follows. to 1 pt vinegar, 1 lb sugar, 1 tablespoon mace, 1 of stick cinnamon, 1/2 spoon alspice, the same of cloves, let it boil & pour on. Sweet pickle Martinis, 3 lbs brown sugar, 1 gal vinegar, 1/2 teacup each of cloves, alspice, & whole black pepper, let all come to a boil, & pour hot over after greasing them Migdlen pickle, 1 peck green tomatoes sliced thin, 1 do cucumbers.
