Tie the jar up tightly. The pickle should be 2 yrs old before using. It is well to cut up 6 red peppers after removing the seed, & add to the spice. also add a large cup of brown sugar, which strengthens the vinegar. The best pickles are of cabbage, cucumbers, white onions, peaches, radish pods, beans, young [corn?] , asparagus, & small mangoes. Virginia yellow pickle, Mrs Davis To 2 gals vinegar, 3/4 lb white ginger ground, 1/4 lb blk pepper, 2 oz red do, 2 of cloves, a tea cup of celery seed, [1?]pt grated horse radish, 1 pt blk, & white mustard d mixed, a few garlic, 3 oz turmeric. The above ingredients should be put in a jar, & set in the sun the 1st July. Tie it up close, & put a piece of board on the top. Put your pickles in salt & water for 3 days, then lay them in the sun to dry. Afterwards scald with vinegar & water, with turmeric in it, drain well, & drop in the jar of vinegar. Sweet green tomatoes Boil 1/2 pt pear tomatoes in strong ginger tea until the wild taste is removed. Then to 2 lbs fruit, put 1 1/4 lbs sugar, & 1 pt vinegar. Spice highly with cinnamon, [cloves?] & mace, & boil 3/4 of an hour longer
