Ripe Tomato Preserve 7 lb small yellow Tomatoes peeled - 7 lb sugar Lay sugar, & Tomatoes together all night - boil the rinds of 3 lemon, (scrape them) until you can eisily run a straw through - put them with the tomatoes & sugar - pour off the syrup, & boil, & skim well - put in Tomatoes, & peel & boil 20 minutes - Take out the fruit with a perforated skimmer & lay on dishes - Boil the syrup until it thickens adding just before you take it off, the straind juice of the 3 lemons - Put the fruit in small jars, fill up with hot syrup - when cold paste over. - Green Tomato Preserves - wash, & scrape 3 ounces green ginger - Boil it in 3 pints water - take out, & slice it - strain the water & return the ginger to it - Prick with a needle 7 lb green tomatoes - add 7 lb fine white sugar put them in the ginger water, & also the strained juice of 2 lemons, & the rinds very thinly pared - Boil all until the Tomatoes are a light green - take them out, & when the syrup isThick pour over them - Both the above sweet meats are delicious H.D.
