Chow Chow - (Mrs H Dorseh 1/2 Peck onions - Ditto green Tomatoes. 5 dozen good sized cucumbers - 1 Dozen large green peppers seeded - Slice each article - 1/2 pint chopped red peppers - sprinke, 1 pint of salt among them, & let them stand all night - Then squeeze them well & put in a collander with a weight on it - beat up 1 oz mace - Ditto white pepper. 1 oz celery seed 1/2 oz cloves - add 3 table spoons ground mustard 1 oz Turmeric - 1/2 pint finely scraped Horse radish & 3 lb Brown Sugar - Mix all well & cover with strong vinegar - Boil 30 minutes or more. After taking yr chow-chow - from the Collander, you must squeeze it again with yr hands - Put the pickle away in small jars - lay on the top of each double brown paper - then cover over & paste up -
