To make frensh bread Take 3 pound of London flower well dride or blewe stone let it be cold put in a litle salt yn set one ye fier a litle above a pint of milk & put to it about 4 ounses of buter when it is desollvd take it of & let it stand tel it be about newe milk warme yn take ye whits of 4 eggs & ye yolks of 2 if ye be small yn may take 5 beat ym & make a hole in ye flower & put ym in about a pint of very light barme if it be not very light les: lest it make it to strong of barme & let it not be biter yn scime ye buter of ye milk & so much of ye milk asyu find in ye mixin will make it a right thickness work ym together with yr hands turne ym not round but lift up yr hands work it tel it will lave both ye bole & yr hands: dust ye table & lay it to rise a quarter of an ouer yn take it to ye oven & make it up lightly & bake it in a quick oven: when it coms out of ye oven raspe of ye top & set it in ye oven agane to harden if it be well beakt yu need not comon custerd 2 crame & a pint of aftrings 3 eggs spise & suger; ys quantity makes about 3 custerds: ye must boyle sinament mase & nutmeg in litle milk too tast ym
