A Plome Cake Take 3 pound of London flowe in a bason well drid & sifted make a hole in ye midle: beat 10 yolks of eggs & 3 whits & halfe a pound of Lofe suger beaten & sifted beat it with yr eggs yn put a gill of rose water & a gill of barme to ym: yn set over ye fier a pound of sweet butter & a pint of crame ceep it stiring tel ye buter be neere meltd yn strowe into ye blower 1/2 ounse of powder mase then take ye buter of ye fier ceep it stiring tel it be newe milk warme yn put all yr lickquids together & strane ym through a towell into ye flower work it together turne not yr hands round but lift ym so do tel it will have both bole & hands clere strowe a litle flower over it & set it ye fier to rise 3 shets of cap paper one a pie bord buter ye top & ye hope & set it one ye paper: yn take it & work it with yr hands upwards but not round mix it as yu work it with 3 pound of corons well cland washt & dride & warme halfe a pound of rasons stond & cut with a knife in 4 or 5 peese a rason when mixt put it into ye hope not to thick yn have rady a prity quick oven in which Let it stand an oure: if yu plase yu may put in sittron cut thin ye crosway ye paper must be turnd about ye hope before it gose into ye oven & [illegible]
