A Large plome cake Tak 5 pound of London flower well drid & sifted 1/2 ounse of nutmeg grated 1/2 ounse of mase beaten & sifted: mix these with ye flower ceep it just warme by ye fier & cover it: yn take a quart of good barme not biter 5 eggs beaten 3 quarters of a pint of sack 3 quarters of a pound of Lofe suger beaten & serst yn a pint of crame a pound sweet butter well washt from salt set ye buter & crameone ye fier a very slowe one ceep it constantly stiring tel ye buter be neere melted yn take it of & ceep stiring tel it be newe milk warme: yn mix gentley together yr barme & eggs yn yr sack yn yr crame & buter: yn mix yr suger & flower together yn make a hole in ye midle of ye flower & strane in all yr lickquids through a towel into ye flower yn work it in with yr hands turne ym not round but lift ym up worke it tel it will lave clere both yr hands & ye boole yn cover it with a cloth & set it by ye fier to rise: yn have rady rubd pickt washt & rub with a cloth & dride & set to ye fier to plump: 6 pound of good sound corons: & halfe a pount of moist sittron cut indifrant
