Little Stickes Cross & Cross to keepe them Downe and when they have Stood about 8 or 9 houres breake a Hole in one and lett the Sugar that is unmelted run out then take out your Rookes and Lett them Dry this Suger that is Lefet will Serve Some more if you have them Ready to buy in when the other Coms out How to Candy Apples & peares Take your Apples or peares and boll them pretty Soft but very Leisurely then Pare or Scrape y:m whether you Please and Cast them into the water againe and there Schald y:m a little then take ym out & then take the Weight of y:m in Shugar & to half a pint of Egg water take a pound of Sugar then Sett it on the fire & Lett it boyle & Scum it very well then putt in your Pares or Apples and give y:m a Scald & then take y:m off & putt y:m into a pott & Lett y:m Stand all Night doing So 3 or 4:days together then take y:m out & lay them on a Sive to Dry a Little before y:e fire then take about a pound of Suger and Sett it on y:e fire to make a Candy for y:m wett it with a Little Egg water Lett it Boyle & Scum it well then put in your Apples or pears & Lett ym boyle till y:e Sugar flyes you must Cut your pears downe about halfe way in the middle then take y:m out and Lay y:m to Dry & thus you must Doe for Plummes Only you must not put them in water but in Suger at first & Jobb ym with a Knife that y:e Suger may go to the hearte
