To Preserve orringes whole Take ye largest & clere from spots well collerd sivel orringes lay ym in water all night: if ye be fresh yu need to chip ym as thin as yu can yt ye white doth not apeere put ym in fresh soft water tel yu have chipt all cut at ye stolke end a round peese out ye bigness of a shiling with a penknife yn put in ye penknife & slit all ye clores yt part yt is to ye midle of ye oringe yn put in yr finger & squese it to ye side of ye orringe where ye see is lies to squese yn out becarefoll yu lose not ye polp from ye sides ye iuse squeseing out it no harme: when yu have don all tie evary orring up in a clane old cloth but no hols evary orring seperatly with ye hole upward where yu tie it like a dumplin put ym in a pan of soft water Lay some thing over ym to ceep yn under but not to crush ye orringes Let ym boyle tel ye water is biter: yn take ye orringes in ye clouths & put ym in a pot & cover ym close & set ym by ye fier to ceept hot yn be quick in puting away ye biter water & take fresh yu must ceep a good fier yt it may boyle sowne when yr wter is biter water yt may ly at ye botom of ye pot & put ym carefolly in yt yu brake ym not ceep ym under ye water ceep ym boyleing tel
