& boyle it thare will a great dale of white scome rise which yu must ceep to one side of ye pan by esef boyleing yu need not stir it nowe when ye scom gose a litle toufe take it of & when ye sirop dranes out take it into ye pan so do tel most of ye [illegible] scome is gon: if yr orringes gose drie one sive dip ye out side in water & lay ym one ye sive tell yu want ym yn take ye pan of ye fier & if it be right it will be as clere as cristol: Let it stand a litle yn put in yr orringes & fill ym if think yr sirop be to thick put in some spoonefolls of water more or less as yu want for it will thicken in boyleing if ye serop be too high ye will be apt to cand in ceepin boyle ym lasurely & turne ym sometimes ceep ym coverd with sirop as well as yu can some times wee put ye handl of a silver spoone into evary hole in yr orringe to ceep ym under nowe & then if any scome rises scome it of when ye are very clere & ye rather sink in ye licker ye are anoufe take ym up into a bason & let stand alnight yn et pots well scolded & hath stode by ye fier all night to drie yr orringe will but iust go into or litle more if ye be to stret it will crosh ym put ym in with ye hole upward put in serop to come about ye bredth of yr litle finger above ye orringe Let ym stand a while yn take of all ye bleus yn cut a round paper & prick hols in it & lay it close to ye serop but first cut it round yt it may
