To Pickle Oysters Mrs Milnes Take 2 hundred & half of larg fresh oysters take Care when you open ym to Leave all the lickeure then taake a poynt of watter & wash your Oysters in it then Strane it & wash tehm again one by one then Strane your lickeure that Came from them thorow a hare Sive then mix the water that you washt your Oysters in with it then leay a thin Cloth over a pot & lett your lickeure run thorow it but dont Squice it Then take the lickeure & put to it 2 ounce of long peper Cut in thin Slices & 2 ounce of white peper & Salt to your tast & Sett it over the fire in a Larg pan & lett it boyle a little while Eassaly & Scom it then put in your Oysters & Sett them a boylin as Soon as you Can & Stir them with a wooden Spoun & after the are Sett aboylin Lett them boyle ten minits then power then into a mug pot & leay a Sheet of Cup paper over them that a little lickeure Com at the top of it & Sett them by then morning then put them into the pan as before & boyle them If it want more peper or Salt you must had more & boyle them & when the are anuf if you cut one you will find it a little hard & Crumby then put them in a pot & Coure them with Cap paper and lett them Stand till the be thorow Child
