A Brown Bread Pudding Take half a pound of brown bread grated, half a pound of Suet and half a pound of Currans, 8 eggs, leave out four of their Whites, six spoonfuls of (each?), half a Nutmeg, sweeten to your taste To Pickle Samphire Pick your Samphire clean from the brown stalks & lay it in salt & water a Day & Night, than put in as much vinegar as will cover it & let it hang four hours over the fire but not boil than take it off & the next day do the same & that no air may come to it be sure to stop it close Mince Pyes Take a Neats Tongue boyld & blanchd & to two pounds of meat take four pounds of the best suet, chop your meat very small and likewise your suet & take a pound of raisins (illegible) & chopped very fine then take a little meat, raisins & suet & chop it together till all is mix'd very well then take the value of half an ounce of salt half an ounce of maize, the same quantity of Cloves, & two large Nutmegs pound all very fine and sift through a hair sieve, mix it altogether with five pounds of Currans, well wash'd dry'd & picked, when you make your Pyes slice in some Citron, Orange & lemon Peel Sugar, Wine, & Juice of Lemon
