Harts-horn Jelly 14 To half a pound of harts-horn shavings, put five pints of water, boyl it softly (close cover'd) 'till half is boyl'd away, or it will Jelly pour it off & let it stand 'Till it is cold, then put it over a clear fire, when melted, put in a little double refin'd sugar, half a pint of sack or rhenish, a little Cinnamon, a bit of lemon Peel, the whites of eight eggs, beat to a froth, pour this into it with the Juice of two Lemons, put it on ye fire & boyl it thick as cream or Pap: pour it through your Jelly bag 'till clear, & then let it run into your glasses. Mrs Roberts Sauce for Boyl'd Carp Take about half a pint of white wine, beat into it the yolks of two Eggs, put to it some melted butter, & a little grated Nutmeg with some Horse-radish, and a Spoonful of water, dissolve in this three or four Anchoves, set it over a few embers, & stir it carefully all the white, 'till 'tis as thick as Caudle. Mrs Morgan A Bean Pudding Half a pound of beans, blanch'd & boyl'd, beat them very fine - take half a pound of butter, melted thick, five Eggs well beat a quarter of a pound of sugar, half a Nutmeg. Beat all well together put a crust in the dish, half an hour will bake it. when it comes out of the Oven you may stick it with Pistache Nuts Mrs Morgan
