To Stew Apples 15 To a pint of water, put a pound of double refin'd sugar, and when it boyls, put in a pound of clear Pippens, pared & cored let them boyl with a continual froth, & when they are near tender & clear enough, put in the Juice of two middle siz'd Lemons, let them have six or seven boilings up, put them in your dish & pour your Jelly over them. Mrs Morgan. Sauce for Boyl'd Fowls With two fowls, take half a pound of lean bacon, & two Eggs boyl'd hard & minced small, two Anchoves, a Lemon the rind & white clean pared off, mince them like the other, then melt some butter thick, & stir all the ingredients into it, take care the lemon does not curdle the butter. Mrs Morgan Green Pease Soop Boyl a pint of old green Pease well, then mash them and put them through a Sieve, mix the pulp in the same water they were boyl'd in, put in two ounces of bacon, a bunch of mint, an onion, & one quart of young pease, & when boyl'd put in half a pint of cream or Milk, with Parsley cut very small Mrs Morgan
