Fish Sauce 18 A quarter of a pound of anchoves, a small stick of Horse-raddish cut in pieces, a blade or two of maize, an Onion, a bunch of Parsley, a little Nutmeg, three gills of Port, half a gill of Vinegar. boyl it altogether 'till half is boyl'd away. Cook Chambers Cream Toasts. Take two french-rowls, cutt them in slices as thick as your finger, crust & crumb together, lay them on a dish, put to them a pint of cream, & half a pint of milk. Strew them over with beaten Cinnamon & sugar. turn them frequently, 'till they are tender, but take care not to break them, then take them from the Cream with a slice. beat four or five Eggs turn over your slices of bread in ye Eggs, and fry them in Clarify'd Butter, make them of a good brown, not black, grate a little sugar on them, they may be serv'd up a second Course dish, but fittest for Supper. Mrs Morgan Pain Perdu Slice the finest Manchet near a finger's thickness, steep it half an hour in good Custard Batter; - then fry it, but not very brown in sweet butter.
