35 To make a Seed Cake Take two pounds & a quarter of flour, Rub into it a pound of Butter, seven Eggs leave out four whites Eleven or twelve Spoonfuls of yeast, half a pint of Cream, four spoonfuls of rose-water, set it by ye fire to rise for half an hour, after it is well risen strew in a pound & half of Carraways. you must put better than half a pint of Milk with your Cream Mrs Allanson A Seed Cake Take a pound of butter & work it with your hand 'till it comes to a Cream, take twelve Eggs leave out half the whites, beat them well & work them the butter, 'till it looks like fine Curd, then take a pound of fine flour & a pound of fine Sugar - being both dry'd before ye fire, & ye batter sifted - mix this in by degrees, with half a pound of blanch'd Almonds, sliced, an ounce of Carraway seeds and two ounces of Cittron, an hour will bake it. Miss Parsons Gingerbread Rub a quarter of a pound of butter, into two pounds of flour, three quarters of an ounce of race ginger pounded & sifted, one ounce of Carraway & Coriander seeds mix'd, the peel of three Seville Oranges & two Lemons Chop'd small, a pound and half of treacle, a quarter of a pound of powder Sugar warm the treacle & Sugar before the Fire, mix all well together & make it into Nuts or Cakes, butter your fingers to role your Nuts.
