Almond Cheesecakes 48 Take half a pound of Jordan Almonds, blanch & pound 'em very fine, with 3 or 4 Spoonfuls of Rose or Orange flower water, grate ye rinds of two Lemons, six Eggs leave out 4 of ye whites, melt three quarters of a pound of butter, & when almost cold, mix it with the above things & half a pound of Sugar. Mr Kendall Hartshorn Flummery Take some Hartshorn or a Calves foot, boyl it to a stiff jelly & run it through a Jelly bag, let it stand 'till cold, then melt it & put it in Cream, Sack and Sugar to your taste, & give it one boyl up, and pour it into a broad Dish, let it be the thickness of Dice & cut it into square pieces eat it with wine or Cream. Mr Kendall To make a Cream Cheese To seven quarts of New Milk, put one of Cream, put it together cold, please to put a little cold water to tender it, when it is come enough break it a little and lade it into a Cloth, as it sinks put a little weight upon it, change it into a dry cloth often, & let it stand 'till Night, then put the Value of a two pound weight upon it to press it, put it into docks for a Day & then put it into Nettles 'till ripe Mr Kendall
