Forced Meet Some stale white bread grated fine, Suet Lemon Peel, a little Veal, an Anchove, a Leek, some Bacon, & a little of all sorts of sweet herbs, chop all very fine, & mix together with some salt, pepper, Nutmeg, mace, clove, Yolks of Eggs & a bit of Bacon. Blanc Mange Two ounces of Isinglass, a stick of Cinnamon a bit of Lemon Peel, Near half a pound of double refin'd sugar & a quart of Pump water set it on the fire to Simmer gently 'till the Isinglass is dissolved, Blanch half a pound of Jordan Almonds & pound them very fine with four Spoonfuls of Orange flower water, Boyl a quart of thick Cream, mix altogether & give it one boyl up strain it through a thick cloth , stir it till cold & then put it in your Cups. Two quarts of (illegible) clear juice of Red or White Currans, one Gallon of Rum & one pound of Loaf Sugar. disolve your Sugar in the Juice then add your Rum & run it thro a flannel bag till very fine then bottle it for use.
