Orange Marmelade Take a dozen of Oranges, peel them and boyl the peels 'till they are very tender cut them in small dice, take their weight in double refined sugar clarify it & boyl it to a thick Syrup. then put in your peels & let it boyl 'till it thickens, squeeze the pulp thro' a hair sieve with a little water. throw it into your syrup & peels & let it boyl well. take it off & add to it the juice of two Lemons & give it one boyl up. Mangoes Take your Mellons about the bigness of large Cucumbers cut them & scoop out all the Middle. lay them in salt & water a day & Night take them out of the brine & wipe them very dry and fill them with mustard seed, three or four bits of Horse radish the same quantity of cloves of Garlicks & Eschalot then put in your piece & tye them up close, boyl your vinegar & throw on them. do so six or Seven days following then boyl them up in the Vinegar & tye them down close. Lemon Solid Grate the peel of a large Lemmon into a China Dish Squeeze the juice through a strainer on it add 2 (oz.?) of fine powdered sugar. pour on it Half a Pint of warm cream stirring it constantly one way till cold.
