66 Floating Island A quarter of a pound of the pulp of Gooseberries, or Apples, a quarter of a pound of sugar, the whites of two Eggs, the juice of two Lemons, beat it together with a whisk 'till white as snow & very thick, it must be laid out with a spoon, as high & hollow as possible half an hour before you send it to table, put it in a dish upon cream. Naple Biscuits Take twelve new laid Eggs & whisk them well then take a pound & half of fine sugar, pounded & sifted, pour it into the Eggs & beat it well together with a pudding stick, then put in a pound & half of fine flour, & beat that together with a glass of Orange flower water, put it (in the frames) to rise by the fire when they are rais'd sift some fine sugar over them half an hour bakes them. Macaroons Take the whites of four new laid eggs & beat them well a pound of sifted sugar, put to ye Eggs & beat well together, a pound & quarter of Jordan Almonds, blanch'd & pounded very fine with a tea cup of Orange flower water, beat all well together, & set it by the fire to rise put them 'on wafer papers & bake them in a quick Oven half an hour.
