67 Calves foot jelly Take four feet cut them to pieces, & boyl them down till the liquor be a strong jelly, when cold wipe of all the fat with a clean Napkin, set 'on the fire with a large stick of Cinnamon, & near a pound of Sugar, when it boyls put to it the juice of Nine or Ten Oranges, or if none as many Lemons as you think will make it equally acid, the whites of thirteen Eggs, well whisk the Eggs first, & then the eggs & juice together before you put it to your jelly, when it has boyld so as to break 'on ther spoon, put it in the bag but first put in your bag some Bay leaves, and a sprig of Rosemary. Ratifie Drops Take half a pound of Apricot kernels, blanch them and pound them very fine with a Spoonful of Orange flower water, take the whites of six Eggs, whipt up to an Oyl, put into it two pounds of double refin'd Sugar pounded & sifted thro' a lawn sieve; beat it very well then put in ye kernels, & mix it well together, set it by the fire to rise, drop them on cards, they must be bak'd in a quick Oven. you may drop them as small as you please. sift fine Sugar over them. Cherry Jam The Cherrys are stoned then put them into the preserving jar, let them be half done or better before you put the sugar to them then let them boil till they look Clear the quantity of sugar is 3 lb to 12 lb of Cherrys. before they are stoned or picked from the stalks.
