71 Beef Alamode Take a Round or Bed of Beef, & a piece of fat Bacon, cut your Bacon in pieces as large as your finger, & long enough to go quite thro' your meat, role them in the seasoning, (which must be salt, Pepper, Cloves, & mace pounded & mix'd together,) & lard your Beef as thick as you like, which done lay it in your Pan, & have ready a Tea kettle of boiling water, to pour over it then put in some Bay leaves, Two large Onions stuck with cloves, two or three Anchov'es, & a bit of Lemon peel. Cover it down close & let it Stew gently, when half done put in a pint of Red Wine, & when the liquor thickens & tastes well of the Spice, take it up, & take out the Bay leaves, Onions, & Lemon peel take off the fat very clean, you may eat it hot or cold. Mrs Webb Orange Cakes Take four or more of the finest & fairest Seville Oranges you can get, take their weight in lofe Sugar, then tye up your Oranges in a Cloth, like Apple Dumplings, boyl them till they are very tender, changeing the water five or six times to take off the bitter. when boyld enough Open them & pulp all juice & pulp thro' a sieve, then pound the whole together, (Viz.) (Sugar, peel, & pulp,) in a Marble Mortar, 'till fine as a Paste, add as much Lemon juice as will give them the Sharpness you like, & drop them 'on Tins, & dry them in a Stove if you have one or at a small distance from ye Fire Mrs Webb
