75 To Salt Beef for Hanging To twelve pound of Beef, take one Ounce of Salt Petre, rub your Beef well with it, & let it lay an Hour, then rub half an Ounce of Sal Prunelle, & let it lay an Hour, then rub half a pound of Brown Sugar & let it lay an Hour, then take half a pound of Bay Salt, & rub it well & let it lay an Hour, then set it up to drain & hang it to dry. -- not in too hot a place. Lady Brooke Bak'd Rice Pudding Take three measures of Milk, set half on the with a bit of Orange or Lemmon peel, to the other half of ye Milk, put half a pound of ground rice, & when the other boyls, pour in your Rice &c; keep it stirring 'till you see it of a proper thickness, pour it into a pan, & stir in near half a pound of butter. When cold put in Six Eggs, well beaten Sweeten to your taste - put in half a pound of Currans, send it to the Oven. Short Crust To a pound of flour, sift in two Ounces of refin'd Sugar, Rub in half a pound of butter, & an Egg well beaten will make it wet enough. Roal it out & cover your Pyes To boil Rice Pick it from the blacks & pebbles, wash it in three or four waters, put to it as much water as will cover it. boil till tender, drain off the liquor, set the Sauce pan upon hot embers and when the dinner is dished, turn it out and serve it up.
