76 Green Pea Soop A peck of peas keep out the Youngest of them & boyl them by themselves in a little water. Boyl the oldest soft enough to pulp thro' a Sieve or Cullender with the liquor they were boyl'd in. Boyl a little mint & shred it small, Fry half a Coss Lettuce put these & the Young Peas with the liquor they were boiled in, into a sauce pan or tosser & let it boil some time, Season it to your taste with Salt & ground pepper, a whole Onion mix a spoonful of flour in a quarter of a pint of Milk & put it in the Soop, & let it boyl up, fry rashers of bacon & bread cut in dice & fry'd in fresh butter, put it in your Dish & pour Your soop upon it. Mrs Webb To Preserve Plumbs A pound of Mogul Plumbs, pare & stone them then stew them in a Jug of Water, till they are tender. Whilst they are doing, boil up a pound & quarter of Sugar in half a pint of Water, put the Plumbs into it while they are hot, & boil them slowly 'till you can by stirring see the bottom of the Pan. if the Plumbs will not part from the Stone cut 'em. When 'tis done, put it in small flat glasses, & it will turn out like Marmelade. Mrs Ainsworth
